I know, I know. You already have so many mac and cheese recipes.
But this is the mac and cheese recipe you want to make, I promise. It’s super simple, but turns out amazingly cheesy and gooey and wonderful. Plus, it’s so super simple to make, which helps when you have a lot of dishes you’re preparing for the holidays.
Around here, whenever there’s some sort of holiday or group gathering and someone says they’ll make mac and cheese for it, they are usually asked “the Mike’s Farm recipe, right?”
Mike’s Farm has been around since 1945 in Back Swamp, NC. Literally, that’s the name of where it is. Though it’s been added on to and it’s a popular field trip location around here, with a petting zoo, hayrides, and a restaurant. Their mac and cheese is amazing and this is the copycat recipe that gets passed around here. But since most of you do not live near Back Swamp, NC, I’m sharing it with you.
One note on portions: when a friend first gave me this recipe, I thought that I’d have to double it because that just doesn’t sound like enough pasta. So, I doubled it… and even though there were something like 15 of us at that Thanksgiving dinner and this was something people went back for seconds of, we still didn’t eat what would have been the normal sized portion of it. So, unless you’re feeding a huge crowd or serving this as a main dish instead of a side, just trust me that this makes a lot.
Mike’s Farm Mac and Cheese
Ingredients
- 1 cup Duke’s mayo
- 1 cup sour cream
- 2 cup shredded mozzarella
- 2 cups shredded sharp cheddar
- 1 3/4 cup uncooked macaroni
- salt and pepper to taste
- approximately 1/2 sleeve of crushed Ritz crackers
Directions
- Cook macaroni according to directions and drain.
- Preheat oven to 350.
- Mix together mayo, sour cream, mozzarella, cheddar, salt, and pepper.
- Stir in the cooked macaroni.
- Place in a baking dish (8×8 or 9×13- either will work, I do recommend spraying with a non-stick spray first)
- Top with crushed Ritz crackers.
- Bake for about 30 minutes or until cheese is melted.
