I can hardly believe it’s already December! Sometime in the next few weeks, I have three different school Christmas programs to go to, school Christmas parties, and I’m a little afraid to even look outside the school calendar at what else we have going on.
About now is when I start my baking frenzy. Because you really can’t go wrong with cookies at all these holiday events. Lots and lots of cookies!
I decided to try a cookie recipe with SPLENDA® Brown Sugar Blend. SPLENDA® Sweetener Products can contribute to a healthier lifestyle by helping to reduce calories from added sugar, and can be used almost anywhere sugar is used, including cooking and baking.
A half-cup of SPLENDA® Sugar Blend or Brown Sugar Blend replaces a full cup of sugar, so it provides only half the calories and carbohydrate of sugar. They are specifically designed for use in baked goods to add sweetness and moistness and provide browning and volume.
Since mint chocolate says holidays to me, I tried SPLENDA® Brown Sugar Blend in a mint chocolate chip cookie recipe. These baked up nice and big(I don’t like when cookies flatten out) and are delicious dipped into a mug of hot chocolate.
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup melted butter
- 1/2 cup SPLENDA® Brown Sugar Blend
- 1 large egg
- 1 teaspoon vanilla
- 1 cup mint/chocolate chips
- Preheat oven to 375 degrees F.
- Line cookie sheet with parchment paper.
- Combine flour, baking powder, baking soda and salt in small bowl and set aside.
- Mix butter and SPLENDA® Brown Sugar Blend in a large bowl.
- Stir in egg, add vanilla and mix.
- Stir in flour mixture.
- Fold in chocolate chips.
- Drop dough by rounded tablespoons onto cookie sheets.
- Bake for 11-13 minutes.
- Allow cookies to cool for 2 minutes before moving to wire racks to cool completely.
