Easy COOL WHIP Cookies for a Fun Treat

I confess: I have a sweet tooth.

I like dessert. And yummy treats.

But, I don’t like to spend a ton of time in the kitchen creating elaborate desserts. Most of the time, it’s just my boys who are going to eat them(and me, and Hubs if he gets home before only crumbs are left) and we certainly don’t need fancy!

They actually have some sort of treat every day- especially since they can be convinced that strawberries are a treat.

It’s all in how you word it, mamas. 

To make that treat a little more special, sometimes I let them have COOL WHIP Whipped Topping along with their strawberries. Something so simple makes it seem like they are getting a special treat!

COOL WHIP is my favorite mom fake out when it comes to everyday desserts: put a dollop on top of fruit or a little alongside some yogurt or pudding and the kids think they are getting something amazing.  Angel food cake, pineapple, and COOL WHIP all layered in a pretty bowl makes my kids feel spoiled.  And yet, it’s all so simple!

But, because this week is spring break for us, I thought I’d get a touch more elaborate. Or if not really elaborate, try something that could be an activity for my boys. Anything to keep kids busy over school breaks.  So, we decided to try making cookies with COOL WHIP. Still such an easy dessert: you’d have to try hard to mess these up!

Easy COOL WHIP Cookies

Ingredients:

  • 1 box cake mix(I found Pink Lemonade)
  • 8oz COOL WHIP
  • 1 egg
  • powdered sugar

Directions:

  • Preheat oven to 350.
  • Stir together cake mix, COOL WHIP, and egg
  • Drop by teaspoonfuls into powdered sugar and coat by rolling in the sugar
  • Bake 10-12 min on parchment lined baking sheet

That’s it! Super easy and totally delicious! This is a great way to get the kids to bake with you, since there’s no difficult measuring to be done. Though I’d suggest breaking the egg yourself if your kids are anything like mine. Also: if you forget the parchment paper, it’s not the end of the world- but it will be a lot easier if you use it!

    OMG.. how much easier could this get! I bet if I used the sugar free cake mix, egg beaters, and the fat free cool whip to lower the calories on these!

    We love Cool Whip! Pudding is my favorite place to dress up a simple dessert. Also love it on a hot fudge sundae and pumpkin pie…oooohhh, now I need a treat!

    Mine did NOT puff up like that. They came out flatter than a pancake!

      When I put them on the sheet, the were in round balls from my cookie scoop- maybe that made a difference?

      My first batch, I forgot to put parchment paper and they came out super flat. The second batch I used it and they puffed right up. Kinda weird. Also I added chocolate chips to the third batch. They came out excellent.

    Has anyone tried adding mini chocolate chips?  I made these today with a strawberry cake mix and didn’t think of adding them until afterwards.

    These are in the oven. It smells SO delicious!! I used a white cake mix (it’s all I had).  Can’t wait to taste them!!

    My assumption is that you can use any flavor cake mix? What flavors have you tried? I’m thinking that chocolate would make them like crinkle cookies. Such an easy recipe, can’t wait to try! I just used cool whip this morning to make a cottage cheese and strawberry jello salad for a BBQ this afternoon 🙂

    I just made these tonight and they turned out just like the picture! I used french vanilla cake mix, regular cool-whip, and added a dash of orange extract. The dough wasn’t as hard to work with as everyone made it out to be and they taste like nothing I’ve ever had before! Since I bought my cake mix during a BOGO sale, I can’t wait to make another batch when these are gone!  Made about 38 cookies.
