Since I love to bake, this time of year is so fun for me. I have my go-to favorites and then always try a few new recipes, too.
Some of the recipes I make are simple enough that my boys make them. Others are a little complicated but I’ll make because they’re a once a year thing.
But I can always use a few recipes that only need a few ingredients or some mixes that just require baking because things do tend to get hectic around the holidays.
This Berry Cream Cake requires just a few ingredients- ones you can easily stock in your pantry and freezer for whenever you happen to need them.
I started with Immaculate Baking Company Yellow Cake Scratch Baking Mix. You can follow the directions on the back of the package, which call for milk, butter, and eggs to be added. But I combined the cake mix with a natural cream soda and baked it that way instead. Then I made the berry sauce using frozen berries. Super simple but looks, sounds, and tastes way fancier than what it actually is!
Berry Cream Cake
- 1 box Immaculate Yellow Cake mix
- 12oz cream soda
- Preheat oven and prepare baking dish according to package directions.
- Add soda to cake mix and stir until combined.
- Bake according to package directions.
Berry Sauce
- 12 oz frozen berries (I used a mix of blackberries and raspberries)
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- Thaw berries and drain the juice into a saucepan.
- Add cornstarch and sugar and heat over medium until boiling and thick.
- Add the berries and mix.
- Chill until ready to serve or serve hot.
- Pour sauce over cake slices when ready to serve. Can top with whipped cream if desired.

I picked it up at a local organic foods market, though their products can be found in other grocery stores.
