As someone who loves desserts, smoothies are an awesome treat because I can have them for breakfast and yet feel like I’m having something decadent.
I did question whether or not I really needed to share any smoothie recipes with you since smoothies are basically just throwing things in a blender and drinking up. Take ingredients you think will go well together and give it a go. But then I tried making a raspberry peach smoothie and it had me gagging and pouring it down the drain. So, I guess it is possible to screw up a smoothie and so it’s not completely silly for me to continue sharing the smoothie recipes that I’ve liked.
This berry colada smoothie has a fun, tropical feel to it. You could use mixed berries, or strawberries or whatever sort of berries you happen to have on hand. I’ve made it with strawberries, a mixed berry blend, and raspberries- all good options. And while this is not quite as amazing as sitting poolside with the adult beverage version of a pina colada, it makes for a yummy breakfast!
Berry Colada Smoothie
Makes 2 servings
- 1 cup frozen berries of your choice
- 1 cup frozen pineapple (or use canned- slightly different texture, but use what you have on hand)
- Small container of Strawberry Greek Yogurt (I use Chobani, which is 5.3 oz)
- Small can of coconut milk (around 5 oz)
- 2 teaspoons honey
- 2 cups ice
Place all ingredients in blender,except ice. Blend on high for about 2 minutes. Add ice and blend for about 2 more minutes.
