When we have an especially busy week here, if I don’t plan out super easy dinners, I’ll end up doing fast food. A week like this one, it doesn’t even help to meal plan unless those meals can be put together within minutes. Otherwise, I’ll get to dinner time and think forget it and oh look. there’s a coupon for pizza.
But eating out gets expensive, not to mention unhealthy. So I have to be prepared with really easy dinners.
Here’s my list for this week:
Easy Creamy Mac and Cheese
Better than boxed and just as quick to make- you cook the pasta in the milk! It turns out super creamy.
2 cups dried pasta
2 cups 2% milk
1 cup loosely packed shredded cheddar cheese
1 tsp salt
1 tsp dijon mustard
Combine pasta and milk in saucepan and bring to a simmer. Cook, stirring occasionally for about 20 minutes. Don’t bring it to a boil. Stir in mustard, salt, and cheese. Cover and let stand for 5 minutes.
I know some people make theirs, but we’re talking about quick dinners here, so go for the Lightlife Veggie Burgers. They have four different varieties- my favorite is the Farmer’s Market Veggie Burgers, but I usually get the Backyard Grill’n Burgers because they taste the most like “real” burgers and that’s what my kids like I find mine in Wal-Mart. (These are made with non-GMO soy for those of you concerned about that). Serve with your favorite toppings and whatever veggies you have on hand. I went with sweet potato fries and red grapes.
Crockpot meal: 2 packages of kielbasa, plus one bottle of beer and one cup of brown sugar on low for about 3-4 hours. Serve with whatever veggies you have on hand.
Chicken Ranch Tacos
This takes mere minutes to put together- as long as you have cooked the chicken ahead of time. I try to do that the night before. In my dreams of organization, I want to do that on the weekend, but have yet to actually get there. Chicken Ranch Tacos from Six Sisters’ Stuff.
Breakfast for Dinner
Scrambled eggs, pancakes, and fruit. And there you go. Though I’m going to attempt to replace the pancakes with banana bread this week- baking it early in the morning with this quick and yummy banana bread recipe. Though in a pinch, I’ve done bagels and cream cheese instead of pancakes or bread.

I have to tell you that if I were still stuck handwashing all our dishes, I would probably resort to fast food more often, just so I didn’t have to deal with the clean up. I had a chance to talk with Dan Goldstein, GE’s marketing manager for this dishwasher. He told us that we did not have to rise our dishes before putting them in the dishwasher. Scrape off the big bits of food, sure. But other than that- put the dishes in there dirty and let the dishwasher do the work. That’s the point of having a dishwasher, right?
And it really does get my dishes clean, even without me taking the time to rinse them beforehand. The only exception I’ve found is when I totally forgot about my crockpot and had it sitting there for days. That needed some extra scrubbing. But that was operator error. 😉
