3 Quick Rice Recipes

Since it’s the first week of January, you’re probably hearing so many people talk about dieting, if you aren’t talking about it yourself.

I’m not quite jumping on that bandwagon, but I do want to be more mindful about what I eat. My biggest problem is skipping meals and then eating a massive dinner because I’m starving or shoving half a dozen cookies in my mouth as I’m making dinner because I can’t even wait until dinner is done.

So, one of my resolutions is to make sure I eat 3 reasonably sized meals as well as having small snacks so I don’t get to that crazed feeding frenzy.

But when the kids are at school and my husband is at work, I tend not to want to cook for just me, so I need simple meals.

 Citrus Rice

Minute® Ready to Serve White Rice + chicken + asparagus + grated orange zest.

I had leftover chicken and asparagus, so this one was easy. Use whatever veggies you have on hand. Next time, I think I’d use Minute® Ready to Serve Jasmine Rice.

Chicken Fried Rice

Minute® Ready to Serve Fried Rice Mix + chicken

Since the Minute® Ready to Serve Fried Rice Mix already has peas, carrots, and onions, I just had to add the leftover chicken I had on hand.

Easy Rice Pudding

Minute® Ready to Serve White Rice + vanilla pudding cup +  raisins + cinnamon

I had just made vanilla pudding earlier this week, so I used about a half cup of that instead of a pudding cup. You could easily serve 2 with this (or save half for later).

    I love Minute Rice. We have a beans & rice recipe that I make often. It’s less than 20 minutes and involves a lot of vegetables on top of the rice.

    I love these little Minute Rice servings. The Hubs and I usually share one when eat some fish or chicken on a weeknight – they are so handy and that you can pop them in the microwave for a minute and eat is fab!

    Excuse me while I make some citrus rice. I think that would be a great way to also use asparagus. These all sound great.

    I love those minute rice cups. I sent a bunch of them to my daughter when she was in college so she could have something to snack on when the dining hall was closed.

    These are great ways to enjoy eating rice. I love the desert idea. We love rice and have it several times a week.

    I love rice, You can put most anything in it and make so many different things with just a few ingredients. It’s one of the few foods that my kiddo will eat. He’s super picky.

    My husband likes these little rice cups. Rice is his favorite food and these are portable so he can take them to work. He works 12hr shifts at the hospital as a repository therapist and often doesn’t get much time to sit down and eat. These are perfect for that.
