I love a good cookie swap.
You bake tons of one kind of cookie and come home with all different kinds of cookies. Along the way, you hang out with good friends and have a kid-free night. Usually. With the except of the cookie swap debacle of two years ago.
My go-to recipe for any Cookie Swap is Ricotta Cheese Cookies. Which I actually stole from a girl I went to a cookie swap with 5 years ago. Because I fell in love with those cookies and it’s one that usually isn’t duplicated at a swap.
They taste like light and fluffy sugar cookies. And the recipe I have makes 8 dozen- that you can bake 2 dozen at a time, since they don’t spread out on the cookie sheet. The recipe is easily cut in half if your family doesn’t eat the way my boys do. Seriously, I’m frightened at the thought of how much they’ll eat as teens if they eat this much now.

Oh those look yummy. I have several cookie books because at Christmas cookies were my area.. ahem now I have expanded to all kinds of things but cookies are still my number one choice.

I use a tablespoon cookie scoop for mine- I don’t think I put that in the recipe.

I make these only I use cream cheese. I’m actually eating some right now. Ricotta Cheese? I adore the stuff. I must try! I use a cookie dough scooper so each one is the same size. My recipe makes 5 dozen.

Awesome book! What a great idea. I could have used this yesterday when I had to bake a ton of cookies for a holiday party. That’s OK. I’m stuck with {strikethrough} enjoying the presence of my kids all week. We still needs us lots of ideas.

Sugar cookies are ALWAYS my favorite! The problem is that I also love to EAT them. We had a huge Christmas party on Sunday at my house with about 40 family members. My daughter made nearly 200 cookies for decorating and I made 8 batches of frosting. It was good times…

They look delish Shell! I have a great Ricotta cake recipe that good for the holiday’s too. The base of the recipe is a box cake mix so it’s really easy to do!

Is it bad I don’t have a go-to cookie recipe? Don’t tell the other moms at daycare, but I plan to buy the cookies for Thursday’s party.

I wished I would have been brave enough to join the cookie swap. I feel like I missed out on more than just cookies! I just never know how my baking is going to turn out and with my mom being out of the country, I wasn’t confident enough. I need to get baking so I can get better at it! My husband is off the week between Christmas and New Years so maybe we can do some baking as a family.

I have a cookie swap every year. I had my 5th one last year. So fun! Those cookies look great. I am always on the hunt for a new cookie.

Sugar cookies are my absolute favorite cookies to bake and eat at Christmas time.
And ohmigosh, yes! My boys eat like yours and they’re all under 6 years old. I’ve been cringing lately at what they’ll eat like when they are teens – like I can barely keep up with their appetites now!

These look delicious. I love anything with frosting on it. My Italian neighbor makes these crescent cookies with walnuts, they are by far my fave. Especially, since I don’t have to make them. I usually just make cut out cookies with my kids and let them decorate.

As I was telling you on the Twitter, I’m also a fan of bringing Ricotta Cheese cookies to any/all cookie-swaps. I make my cookies a tiny bit flatter, and maybe twice as large, as you do, though, so I don’t quite have as many from a single batch.
I dip one end in either a sugar glaze or melted chocolate (even if I don’t eat chocolate) and then sprinkle sprinkles or coconut on top.
But, I seldom tell anyone the actual cookie name, and I’m reluctant to pass out the recipe . . . for fear of the ricotta haters.

What a great idea. The cookies look delicious. I don’t make a lot of sweets so I really don’t have anything that I make really. My dad made something called a buckeye, and I’ve not been able to make them as well as him. It’s peanut butter ball dipped in chocolate. I’ve had a hard time getting the chocolate right. I need to try it again.

This is GREAT. I love cookies. But I probably couldn’t give mine up. I’d enter the swap and collect all the goods, and not send any in return. I realize how wrong this is, but I can’t help myself! I don’t think I’ll get invited to any swaps now. LOL!

Found your blog through the ebook. We made your cookies today so my hubby could take some to his work Christmas party and so I could have some for tins. They are delicious. Though mine did flatten more, not staying as spherical as yours. They tasted great though.
